Sweet ‘n’ Zesty

Happy Mother’s Day ladies! 

What a beautiful thing to celebrate the Superwomen in our lives – and what better way to do it than with a spot of tea and cake!

My Mother requested a plain Vanilla Sponge cake, but I also surprised her with a new recipe, a Classic Cherry Cake

Classic Cherry Cake

 

A loaf of sponge cake embedded with sticky Glacé cherries, with a blend of flaked almonds and a light hint of lemon. My taste buds were tantilised with the sweetness of the fruit, the wholeness of the nuts and the crumbly-softness of the cake. I can see that this could fast become my new favourite! I’ve quickly learnt that the flavours of berry-based cakes and bakes can be enhanced by the zest and juice of lemon; so if you’re a lover of the sweet ‘n’ zesty then this is a cake for you.

Stressed Is Desserts Spelt Backwards

Every body copes with stress in different ways. Some become introvert, extrovert, some drink, some shop, and some attempt to take on odious tasks to mask the problems. But I clean and bake. Truth be told I clean and bake regardless, but my best work is done when I am stressed or upset. (I know, I know, I’m going to make someone a very happy wife one day.)

Over a week ago, on Mother’s Day in the UK, a friend of mine passed away suddenly and even today I’m not sure if I’ve grieved properly. (Is it possible to go through the 7 stages of grief in a week? Probably not, I admit I most likely need therapy.) It may sound strange, but cleaning and baking are two stress relief methods that keep me distracted.

After scrubbing the bacholerette pad from top to bottom all week I spent the weekend baking up a storm. I attempted to make crêpes for the first time- they tasted okay but I should have fried them a little thinner, I think I had the-pancake-mentality in my head! Practice-makes-perfect so I’ll be sure to keep making them. I also baked a classic Victoria Sponge cake and Chocolate cupcakes with a candy-cream frosting. 

Chocolate Cupcakes

175g/6oz Unsalted butter

1 teaspoon Vanilla Extract

175g/6oz Caster Sugar

Eggs x3

115g Self-Raising flour

1.5 teaspoons baking powder

6 teaspoons Cocoa Powder

80ml Double cream

Icing Sugar/Confectioners Sugar

Milk & White Chocolate sprinkles/candies- for decorating

Makes 15-20 cupcakes.

  1. Pre-heat the oven to 170 degrees/Gas Mark 3 or 4.
  2. Whisk the butter, sugar and vanilla extract together until smooth. (I usually use approx. 140g of sugar instead and the cakes taste just as sweet, but you can measure to your liking and taste.)
  3. Crack the eggs into the mixture one at a time and whisk for a few seconds, avoiding over heating the mixture.
  4. Measure the flour, baking powder and cocoa powder into a bowl and sift it over the cake mixture. Sift half of the flour mixture and use a spatula to fold and mix the batter together. Repeat this process until all the flour and cocoa is mixed in and of a smooth consistency.
  5. Line a cupcake baking tray with cupcake cases, and using two teaspoons spoon the mixture into the cases half way full.
  6. Bake for 15-18mins and use a skewer/cocktail stick to check that the cake is fully baked. Leave to cool for 10-20mins.
  7. While the cakes cool, whisk the double cream until the consistency becomes thicker and sieve some icing sugar into the mixture for a sweet kick. Leave to cool in the fridge while the remainder of the cupcakes bake.
  8. Once the cupcakes are baked and cooled, spread the cream mixture over the tops of the cakes and sprinkle with the chocolate candies, or any topping of your choice.

Serve with a fresh pot of tea :)

The Birthday Detox

I recently read an article somewhere that said something along the lines of ‘February is the most boring and dreary month…’ with face in palm and mouth wide open I quickly turned over that page! Come on, boring? Dreary? I can’t speak for the author of that article but February is one of the months when all my best baking happens; Valentine’s Day (see my previous post, ), Pancake day and at the end of this fine month I celebrate my birthday. What could possibly be boring about that? Before the month of January even ends I’m already thinking ahead to what I’m going to drown my pancakes in (obviously the top choice is maple syrup, but I like to dream about the trimmings too), as well as what type of birthday cake I’ll be treating myself to. It’s almost too much excitement to contain. But before I start reeling off various mouth-watering descriptions of my birthday-cake-buffet I feel like this is an opportune moment to grind to a halt and introduce a little something I call ‘The Birthday Detox’.

Some three or four years ago when I was at University I forced myself into a yearly ritual known as The Birthday Detox. If you look towards the top of my blog page you’ll see that my tagline reads ‘I love cake. I dream cake, I bake cake, I eat cake, and now I blog cake!’ excessive amounts of cake, and that excludes all the snacking I do between meals! Now cast your minds back a few weeks to Christmas time and all the unnecessary eating that happens within that season, well my birthday is like another Christmas! I seriously let myself run wild and it’s not a pretty sight. I digress… I came up with a temporary solution to my birthday gluttony, a 7-10day detox and abstinence from cake and other snacks. (If I had real will power I would detox for a month!) This sacred tradition entails purchasing an endless supply of fresh fruit, vegetables, nuts and other healthy produce. There’s no denying that trading in a slab of carrot cake for a bowl of strawberries or a raw carrot seems absolutely ludicrous, but it’s all in the name of clear skin and a birthday glow!

A word to the wise, if attempting The Birthday Detox please recognise that you will come up against opposition and ridicule. Exhibit A, I bought a supply of candies for my piano teacher this week- he offered the bag to me but I kindly rejected saying I was starting a detox. He then told me to get out! Exhibit B, I went to the movies with a friend last night and she offered to buy the popcorn- I explained I was starting a detox and she laughed saying she didn’t believe me. It wasn’t until we were in the movie theatre and I reached into my bag and pulled out a box o’ grapes and a packet of salted peanuts that she took me seriously. Well, she laughed first then acknowledged my seriousness. It’s not going to be an easy week when Pancake day arrives in the UK, just days before my birthday, but I sure as heck will try.

 So fellow cake lovers, please show me your deepest empathies this week when I endeavour to continue blogging about my love of cake while shovelling down handfuls of raspberries, or glugging down endless cups of green tea. I can only muster up the courage to persevere through this challenge with the knowledge that they’ll be a sickly sweet birthday breakfast waiting for me on the other side!
