Berry Compote


Frozen mixed berries (Raspberries, Gooseberries, Blackcurrants, Blackberries, Blueberries)
OR Purchase Fresh berries and home freeze overnight
Caster sugar (to taste)

Place frozen berries in a microwavable measuring jug and cover the top with cling film (plastic wrap). Avoid filling the jug to the very top as this will cause overspill. Microwave the berries for 2mins and stir. Continue to do this until the berries begin to thaw out, then gradually add sugar. The combination of mixed berries will taste sour so the sugar should be added to your taste.

Once the berries have thawed out, serve over fresh cakes, ice-cream, Crêpes or pancakes. (N.B. There may still be whole berries in the mixture, as long as the berries are no longer frozen you can serve this.)
